I believe my fondness for breakfast stems from the fact that I begin my mornings with a run, and after I finish, my hunger intensifies, making me even more excited to indulge in a delicious meal.
During weekdays, my go-to breakfast consists of an omelette featuring either chicken or black beans, topped generously with salsa. I accompany it with a slice of toast and a steaming cup of coffee. However, when weekends or special occasions arrive, I like to shake things up and indulge in breakfast cupcakes. My breakfast favorites encompass a wide range of delights, such as waffles, pancakes, French toast, muffins, and any delectable egg creation. I am one of those individuals who believes breakfast can extend beyond the morning hours. For instance, I derive immense pleasure from crafting scrumptious savory fries for dinner, loaded with an abundance of vegetables, cheese, or meat. These fries provide me with the ideal dose of quick-digesting carbohydrates, without causing any discomfort even after running 10 miles.
Regardless, you can expect to find numerous pancake recipes on this website in the future. However, let’s refocus on these muffins for the time being. I prepared them using almond flour, offering a high-protein and low-carb alternative. To enhance their taste with a delightful autumn essence, I incorporated diced apples, cinnamon, and dried cranberries. If you’re seeking a muffin that provides ample protein and wholesome fats to support your body’s needs, these muffins are definitely worth a try!
Apple Cranberry Muffins (grain free)
Healthy, grain free muffins. Perfect for breakfast or an afternoon snack!
Ingredients
2 3/4 cup almond flour (I use Honeyville brand)
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
3 egg whites + 1 whole egg
1 teaspoon vanilla extract
1/4 cup honey
1 apple, shredded
1/3 cup dried cranberries

PREP TIME: 15 minutes; COOK TIME: 25 minutes; TOTAL TIME: 40 minutes
Instructions
Preheat oven to 350F.
Spray a 12 cup muffin tin with cooking spray or line with muffin cups and spray them.
Combine the flour, baking soda, cinnamon, nutmeg, and cloves in a large mixing bowl.
In a smaller mixing bowl whisk together the eggs, vanilla, and honey.
Add the egg mixture to the dry ingredients and whisk until combined.
Fold in the shredded apple and dried cranberries.
Fill the muffin cups 3/4 of the way full with the batter.
Bake for 20-30 minutes or until a toothpick inserted comes out clean.
Keep an eye on them as they bake, almond flour has a tendency to burn easily.
